In this famous city of Lu cuisine, pancakes and pork make the most wonderful breakfast combination.
If you eat pancakes rolled with pork head, it is important that the pancakes are hot and the pork head is cold and with meat jelly, while for drinking, it must be served with lard and pork blood soup.
Pancakes, one of the traditional staple foods of the northern regions of China, originated in Shandong. A spoonful of ground millet batter and a sizzling hot iron griddle are the tools used to make the delicacy, often simple and crude.
The rice batter is elegantly poured in the hands of the gourmet, stinging when it meets the heat, then a wooden spinner is used to smoothly turn and twist, spreading left and pushing right, and the hardcore pancake aesthetic takes shape.
The people of Bosan have their own way of making the heads of pigs look lovely. The bean curd box is made with great care, using bean curd ordered in Bosan sour paste with just the right amount of heat to maintain both the integrity of the dish and the perfectly blended taste.
The dish is golden red in colour, delicate in flavour, full of flavour, tough in skin and tender in filling, and topped with a topping made from a thick soup.
